We offer a variety of sake qualities depending on the production lot.
Each brewing process uses 75kg of rice and produces about 160 bottles of 720ml sake. The brewers use carefully selected ingredients, and the entire process of making koji and moto (rice malt) and brewing is done by hand. The sake is made by incorporating a complex array of ideas that go beyond sake brewing techniques, born from the unexpected ideas of craftsmen who have experience in brewing various types of alcohol (shochu, wine, etc.).
In May 2022, we opened the micro sake brewery "Karashima Koku no Kura" using the "Sake Special Zone System." Here, we boldly carry out brewing on a very small scale with flexibility throughout the four seasons, and deliver the brewed sake as "Wakabotan Rinso."
