Sanwa Shurui’s refined sake brewery, KOKU NO KURA, is located in the scenic hills on the outskirts of Usa City. We have returned to the basics of sake brewing, relying on human ingenuity and meticulous craftsmanship to perfect the koji, a crucial element in sake production. This allows us to produce sake of unparalleled quality.
Meanwhile, we are introducing the latest equipment for aspects that are difficult to manage with human power alone, such as fine tuning the temperature and humidity and hygiene management. We aim not just to achieve efficiency but also to push our limits. It is in this kind of environment that we make our sake.
