Quality of sake

This craft beer has unmistakable hop-derived citrus notes and the aroma of well-ripened summer oranges. The first sip delivers a refreshing bitterness reminiscent of spring buds and herbs, leaving a memorable impression.

Technology

This Session IPA is brewed using Nishinohoshi malt from Usa, Oita Prefecture, wheat malt, and sake lees from the pure rice sake “WAKABOTAN RINSO,” brewed at Karashima Koku no Kura.

Sake lees are dissolved, and their aroma and flavor are carefully selected before being added during the wort boiling process. They are thoroughly dissolved in the wort to enhance aroma, viscosity, and cloudiness.

Hops used during brewing include Cascade and Falconers’ Flight 7Cs, which provide a robust bitterness and citrus aroma that is characteristic of IPA. During the late main fermentation, Cascade, Falconers’ Flight 7Cs, Simcoe, and CRYO Simcoe were dry-hopped to add young leaf, flower, and fruit aromas.

“Windsor” yeast is used for its sweetness and body.
