The craft beer has an incredible aroma of yuzu, with a delightful and refreshing sour and bitter flavor derived from shochu, koji, and yuzu juice, with a smooth texture.
It is blended with wheat malt to smooth the flavor, based on Nishinohoshi malt from Usa, Oita Prefecture. Yuzu is processed and added so that the essential oil components in the rind are thoroughly dissolved in the wort. The recipe is carefully crafted to ensure the freshness of the yuzu juice blends harmoniously. We blend hops using varieties (Cascade, Citra) that complement the yuzu flavor without overpowering it. The amount, timing, and temperature of the addition are carefully adjusted to enhance the aroma while ensuring that no bitterness is added.
The yeast is selected to enhance the characteristics of the raw materials using “BRY-97”.
