Grown in the rich, fertile rice-growing region of Usa in Oita Prefecture, this sake is crafted to bring out the delicate flavor of Hinohikari rice. The koji is cultivated with great care to enhance its enzymatic activity, and the dissolution and fermentation of the rice are meticulously adjusted by adding water and controlling the temperature to achieve an alcohol content of 14%.
During the process from pressing to bottling, we carefully controlled the amount of carbon dioxide gas contained in the moromi so that it would not escape easily, and in the one-time pasteurization process, we expressed the taste of freshly pressed sake and its slight effervescence.
In 2016, we embarked on an exciting journey to create a product that pursues a more elegant and fruity taste from the traditional sake quality. The vast Usa Plain is home to a unique variety of rice called Hinohikari, which, in the past, was primarily used for food and rarely used as a raw material for sake. This product has been expertly crafted through repeated trials of rice polishing, koji production, and brewing methods to enhance the product’s delightful fruity flavor while preserving the characteristics of the rice.
